8)Fourth of July 2010 is here ! least the rains have subsided for the time being. temps here in Missouri has been soaring upwards 90's, yet the humidity has been somewhat very much "bearable". This is more of a stew to enjoy.. very tasty dish.... great with crusty bread dipped in olive oil..

Coat a large lidded pot or skillet with olive oil over medium heat. Add chicken pieces. Season them with salt, pepper and thyme. Brown on each side. (If desired, season with chicken seasoning, too).
